The great foam inspection
Standards are established. Mutjo fails his own.
The Matji develop a testing protocol for foam. It involves leaning over the bowl, very close, and staring.
Bubbles too large: a slow blink of disappointment. Foam too thin: the smallest lies down flat on the counter, overcome. Perfect foam — stiff, glossy, quiet — earns a small collective bounce, which is not awarded lightly.
Mutjo, who taught them everything they know, whisks eleven bowls before he earns the bounce.
He tapes a photograph of the eleventh bowl to the wall, rather as one hangs a diploma. The Matji approve of the frame. They had opinions about that too.
